 COUNTRY: Honduras Department: La Paz Municipality: Marcala Species: Arabica Sensory profile: “A coffee with natural notes of citrus, honey and caramel. » VARIETY: Pacas, Typica Altitude: 1200-1700m Harvest: September to November Process: Washed Drying: Natural in the sun SCA rating: 83 ABOUT : This coffee is grown in the Marcala region, between 1200 and 1700 meters above sea level and then harvested between the months of November and February.   Coming from organic farming, it is the fruit of the work of several partner producers of COMSA (Café Organico Marcala).   This private company approaches coffee culture with an approach based on sustainability.   The cooperative is geared towards supporting producers who wish to implement cutting-edge organic farming.   Together, the cooperative and the farms are working towards a change in culture to move from conventional agriculture to organic agriculture around very strong environmental values.   The approximately 700 producers who make up this company regularly receive coffee tasting and organic farming courses.   The cooperative also subsidizes the education of children in the community in order to benefit future generations. THE MARCALA REGION Marcala is a municipality located in the department of La Paz, in the southwest of Honduras.   A few years ago, the town had a large cooperative which brought together many small producers.   After its breakup, the cooperative abandoned all its member producers who then found themselves without a processing plant for their coffees.   Around sixty producers then decided to come together to form the private company COMSA (Café Organico Marcala).   Today, there are more than 2,000 producers who work collaboratively to defend the values ​​of society and transmit them to as many people as possible.   Regularly, courses are given to producers on the themes of tasting and implementing organic farming on a farm.    COMSA also subsidizes education through scholarships for the children of producers who are members of the company, but also for children in the community whose parents are not producers.   This is how every year, they give English lessons to the children.   They even started French lessons this year.   In addition to organic coffee, they strongly promote organic farming and the consumption of organic products more generally; every week there is a market of organic products which is organized in the town of Marcala.    Marcala has a dry and wet processing plant.   They process most of their coffees themselves, buying very little parchment coffee, but only from producers to whom they give advice on processing.    The “Marcala” designation of origin has the following characteristics: - 2354 producers, - 19 municipalities which historically produced coffee in Marcala, in 3 departments - coffees always having more than 80 points - a minimum altitude of 1100 m - a characteristic profile with medium to high acidity, lots of body and spicy notes.
