Under pressure from industry and the massive arrival of refined salt, the salt workers of Guérande were encouraged to produce a whiter salt, closer to industrial salt, which is now firmly established in consumer habits. However, the whiteness of the salt depends on the general condition of the saltworks, the specific characteristics of the clay and the know-how of the salt worker: each batch is unique. Coarse grey salt, typical of the region, is traditionally preferred in Brittany for its natural appearance and mineral richness.
