The whiteness of the salt depends on the condition of the saltworks, the nature of the clay, and the expertise of the salt worker at the time of harvesting. ­ Coarse grey salt often comes from recently reclaimed salt marshes, from “softer” or friable clay and from ultra-precise water management. ­ Both salts offer a very similar natural composition: everyone has their own preference depending on culinary uses and family tradition! In Brittany, grey salt is the benchmark for gourmets, while white salt approaches the refinement of pure salt.
