For all your desserts! The 56% chocolate pucks can be used to make chocolate mousse, ganaches, moldings, coatings and whatever chocolate you fancy! The pucks must be melted in a water bath for a few minutes before use. They are rich in cocoa butter, which makes it easier to work with chocolate.
