ELABORATION Syrah and Merlot grapes fermented in stainless steel to controlled temperature. Winemaking is exactly like the of a white wine but we do it with red grapes. Harvested by hand in August, we try to harvest the grapes a little greener than normal so you don't have a load of very high colour. TASTING Very intense cherry color with brick tones. On the nose: ripe fruit, leather, truffle and scrubland. On the palate: elegant, round and good acidity on the palate, tannins polished, very long palate. PAIRING Red meat and game.
