 Coffee roasted artisanally in France by the MOF roaster 2016.     ABOUT El Tostón is a varietal blend from farms in the Dipilto region, Nicaragua. Blend of 90% Caturra and 10% small grains (grade 16 to 18) of Maracaturra and Maragogype. The coffee takes its name from a typical Nicaraguan dish, made with plantain bananas. The idea of ​​El Tostón is to offer a coffee with the quality of a good cup, solid and homogeneous, with a score between 83.5 and 84.5. Additionally, the high altitude of the Dipilto region makes for a complex, tangy cup. It is a round coffee, very well balanced. The body is full and chocolatey in espresso and more reminiscent of caramel and chocolate in filter. Concerned about developing different processes on the same farm, this coffee is offered in 3 processes: washed, red honey and natural. Natural Toston dries on African beds for 35 days. Result: zero process water for this natural coffee and as a bonus a clean and fruity cup.     DIPILTO The Dipilto terroir is located in the producing area of ​​Nueva Segovia which occupies the northwest corner of the country separated from Honduras by the natural border of the Dipilto and Jalapa mountain range. In this region we find the highest point in Nicaragua, Mogoton peaking at more than 2100 meters. The entire economy of this region is based on cereal production (corn, beans), coffee, tobacco, livestock and wood.
