At an altitude of around 1800 meters, arabica coffee grows spontaneously here, in the shade of tall trees. For millennia, each family has been picking cherries, drying them in the sun on suspended beds, toasting them, crushing them in a mortar and offering coffee to guests following an atavistic ceremony, a solemn rite, with a strong symbolism of respect and hospitality. Producers harvest the ripe fruit, selecting the reddest cherries. The result in the cup is a coffee with a medium body and a pleasant vanilla aftertaste.
