Type 150 whole wheat flour is made as before, ground on a stone grinder. It is the most nutritious of wheat flours because it is the least refined. It contains the germ, the protein base and a large part of the bran. The type of flour expresses the quantity of minerals (T 150 = 1.50%). Since minerals are mainly contained in bran, the higher the type of flour, the more complete and nutritionally rich the flour. T 150 flour contains all the nutrients of the wheat grain, including the germ. It is thus of great nutritional richness: rich in fiber, sources of protein, magnesium and vitamin B1.
