Pecorino Romano is a hard, cooked cheese, produced with fresh whole sheep's milk, coming exclusively from farms in the production area, possibly inoculated with natural cultures of lactic ferments native to the production area and coagulated with lamb rennet in pasta coming exclusively from animals raised in the same production area.  Pecorino Romano has a thin rind of light ivory or natural straw colour, sometimes covered with special food protectors of a neutral or black colour.  The cheese paste is compact or slightly streaked and its color can vary from white to more or less intense straw yellow, depending on the technical production conditions.     The taste of the cheese is aromatic, slightly spicy and savory in the table cheese, intensely spicy in the grating cheese.     The shapes are cylindrical with flat faces, with a height of the heel between 25 and 40 cm and the diameter of the plate between 25 and 35 cm.  The weight of the shapes can vary between 20 and 35 kg; these have the original brand imprinted on the entire heel (a rhombus with rounded corners and containing the stylized head of a sheep inside) with the words Pecorino Romano.
