
At the start of autumn, the hives are moved even higher to the mountains to collect from wild summer flowers and mountain thyme. Mountain thyme is a little bush, met in rocky mountains and high altitude, over 1000 metres. Its flowers are white, it can blossom from the end of August to the end of October, and it offers the “mountain” version of Thyme honey (white thyme). Its honey has a deep red colour, thick with an exceptional aroma and taste, some years due to high fructose concentrations can leave a “burning” taste in the mouth. Rich in metals like iron and copper, has strong stimulative and antiseptic qualities. It crystallizes naturally soon after its harvest and turns its color to light beige/brown. Needs rain to blossom and can be stopped by long drought or strong rain and cold weather.
