Oak honey is harvested on July at the biggest and ancient Oak forest of the Balkans at nw Greece, at an altitude of 500ms. Oak tree had a legendary part at ancient Greeks, was known as the tree of Zeus. Moist and warm weather favors its honey production, but a strong summer rain could stop it completely. It’s a honey very rich in metals, with an intense aroma and a very dark color, close to black, known for its density (very thick, caramel tones) and its distinct flavor. It doesn’t crystallize soon as it has a low glucose/fructose concentration. After its crystallized the color turns to light brown. Recent official publications have shown it has similar characteristics with Manuka (New zealand’s) honey.
