Dried Rosemary

Rosemary, an aromatic herb prized in cooking for its refined taste and fresh aromas with notes of thyme and mint, pairs harmoniously with a variety of savory and sweet dishes. It has mild, sweet flavors with a slight acidity, as well as a spicy, sage-like flavor with earthy, grassy and fruity notes.  Rosemary, belonging to the Lamiaceae family, grows mainly in the limestone scrubland of the south of France and in the scrubland of the Mediterranean basin. Its powerful and aromatic flavor makes it a versatile ingredient in the kitchen, suitable for flavoring grilled meats, vegetables and sauced dishes. It can be used fresh or dried.  Interestingly, rosemary has been associated with beliefs and legends since ancient times. It is considered a magical plant with stories like the legend of the Virgin Mary drying her shawl on a rosemary shrub, which is said to have given its flowers their light blue color. Christians also attributed healing powers to it and considered it a good luck charm.  In terms of health, rosemary is rich in vitamins A and B6, as well as minerals such as calcium, iron, magnesium and potassium, contributing to the well-being and proper functioning of the body. It is also rich in antioxidants, helping to fight free radicals and prevent premature cell aging. Its essential oil contains active compounds that reduce inflammation, improve digestion and stimulate the immune system. Consumed in the form of herbal tea, powder or capsules, rosemary is also known for its beneficial effects on the immune system, the digestive system and memory.  Whole rosemary is used in a wide range of dishes, from savory dishes to desserts. It goes perfectly with fish, pasta, rice, soups, grilled and roasted meats, braised vegetables, sauces and marinades. In addition to its taste qualities, it brings a decorative touch to your dishes.  To reveal the full flavor of rosemary, it is recommended to grill it or heat it in a pan before adding it to your dishes to release the essential oil and obtain a more intense flavor. You can also add it at the end of cooking to flavor your vegetable or meat dishes.
