If we named this coffee “lime,” it’s not for nothing! In the cup, we discover a beautiful aromatic complexity between the acidity of citrus fruits, the delicacy of caramel and the sweetness of honey. Limon takes us to the Huila region, where the majority of producers manage farms of 1 to 5 hectares, for 10 to 15 bags of exportable coffee. There, the climatic conditions are ideal for producing quality coffees. What makes these cafes special? A nice acidity, which we easily find with this Limon coffee. This coffee was sourced from Racafé, a dynamic exporter with a strong presence in Colombia. With their CRECER quality charter, Racafé raises awareness among producers about the preservation of natural resources. Racafé also contributes to improving the quality of life of coffee growers through fair pay, but also through training that helps improve the quality of coffees and, consequently, the remuneration of producers. Huila is one of the most famous coffee producing regions in Colombia, it is part of the new Colombian coffee belt with many young people involved in its production with a curiosity for the processes and new ways to go beyond the traditional fully washed Colombian coffee. Incredible coffees can be found all over Colombia, but the Huila region stands out for its quality and quantity. Its reputation is well established and many coffees from this region have won the Colombian Cup of Excellence. It is therefore no coincidence that this region has obtained a controlled designation of origin. This region has a wide variety of climates and soils, which facilitates the diversity and expansion of livestock and agricultural production: bananas, corn, tomatoes, cocoa, sugarcane, cassava, onions, pineapples and blackberries.
