This vintage is produced using the limited maceration method, known as saignée. It consists of separating the must from the skins, after coloring during a short maceration of 8 hours, at a temperature below 8°C. The particularity of this wine lies in the selection of a grape juice located as close as possible to the maceration cap, which gives it a unique aromatic and taste intensity, with notes of small fresh red fruits (grenadine). Delicious attack on the palate, fresh finish. The practice of racking is carried out by hand by gravity. It is enjoyed as an aperitif, and works wonders with grilled meats, salads, cold meats and poultry. *SILVER medalist at the 2023 Organic Wine Competition (Amphore)
