Defatted pistachio flour is a great gluten-free ingredient and a real gourmet speciality. The unroasted pistachio kernels are defatted naturally - the oil is squeezed out - and then ground into flour. The greenish pistachio flour can also be used as a base flour, for example in the batter of pancakes, pies, butter cakes, but can also be mixed into smoothies, muesli or oatmeal.
