An island paradise for thyme With its intense aroma reminiscent of summer and the sea, our honey takes you to a small Greek island: where the thyme blooms, from whose nectar this special honey is made. Thyme thrives best in sheltered, full sun and warm locations: what better than an entire uninhabited island? The salty sea air, the dry and calcareous soil are ideal for the plant. With its fragrant blooms, it attracts Michalis' bees, who drink thirsty from its nectar. This is how they give the thyme honey its expressive aroma. As a result, our honey has a high content of thyme pollen. A honey can be called thyme honey if just 18% of its pollen comes from thyme blossoms. Thanks to the large supply of wild thyme on the island, our honey achieves a high content of 33%. This makes it particularly aromatic. It is a completely natural product, without the addition of preservatives. Incidentally, thyme honey is largely unknown in Germany. Because in this country there are hardly any thyme fields that are big enough to provide enough flowers for the bee colony. (Thyme isn't exactly a fan of our cool winter climates...) So that his bees can snack on the thyme undisturbed, beekeeper Michalis becomes a chauffeur twice a year and takes them by water taxi from the mainland to a small island. The Sounion bee taxi sounion A hamlet situated at the cape of the Attica peninsula - around 1 hour 1 hour south of Athens. In winter, Michali's bees live here on the mainland, in a location that could hardly be more luxurious: not far from the ruins of the Temple of Poseidon, he sets up his boxes. Before Easter, when the temperatures are constantly above 14°C and the bees wake up from their hibernation, the beekeeper then takes his colonies by boat to various uninhabited islands in the region. (It's not for nothing that his neighbors joke about Michaelis and call it the “Sounion bee taxi”.) There worker bees collect the fine nectar from the thyme blossoms away from people and pollution. Once the honey is ready, the harvest begins in mid-July and lasts until the end of summer. Our partners Michalis - honey for 3 generations Michalis runs a family business that is now in the hands of the third generation. His father Stefanos lived in Germany, then moved back to his native Greece. It was he who got his son interested in beekeeping and introduced him to the traditional trade. “I was very curious as a child. Wanted to know exactly how things work. I was fascinated by the stories my father told me about the life of bees. Bee live in large families, with 40,000 - 50,000 insects. This is only possible with a clear hierarchy, organization and division of labour.” Michalis remembers the stories of his father Stefanos. "Then I always went to the island with the thyme bees and started to support my father." So beekeeping continues as a family tradition... ... and does not stop at the 3rd generation either: Because in the meantime Michali's son, Stefanos Junior, has also dedicated himself completely to the bees: He is a young beekeeper and will one day take over the family business.
