We love the variety of coffee.
Following the old Hermetic maxim “You have to do it yourself”, we roasted well over a thousand batches before our first release. And yet, every time we develop roast profiles or brew recipes, we are reassured that every coffee needs to be treated differently to bring out its distinctive flavors. And we are always amazed at how complex and at the same time unique the taste of coffee can be.
We only use Arabica highland coffee. Its beans grow more slowly and are therefore more dense than Coffea Robusta lowland coffee beans - therefore Arabica coffee contains a greater amount of aromas to be released.
To put it simply, roasting coffee is like baking a cake: by baking it until it is black, they all taste the same. When baked to a point where they're just right, they all taste different. The same goes for coffee. That's why we lightly roast our coffees to bring out the typical flavor characteristics of each coffee. Again, the variety seems endless and we are very excited to share it with you.
