A traditional roaster established in Thônes since 1992, Les CAFES METRAL specializes in the roasting and sale of coffee.

CAFES METRAL, artisanal roasting in THONES offers you their selection of Arabica coffees from all over the world selected for their great taste quality.

The second most consumed product in the world after oil, coffee supports approximately 25 million people in the world through its production (mainly small producers) and 110 million people through its importation, processing or distribution.

Coffee grows in the form of cherries on a tree called the coffee tree, which is pruned to around 2m50 in height to facilitate its harvest. When the cherries reach maturity, they are picked by hand and then they are spread out on drying areas so that the fleshy part dehydrates and disintegrates, or they are washed, that is to say soaked in water long enough for fermentation to break down the fleshy part.

At the end of these operations, the coffee is sorted in order to eliminate the bad beans and then mechanically hulled to rid the beans of their skin. We then obtain green coffee.

The coffee tree prefers tropical land at medium altitude (200 to 2000 m) on either side of the equator. A coffee tree produces around 2.5 kg of cherries per year which yield around 700 g of green coffee, or around 500 g of roasted coffee.

Global coffee production in 2017 reached 154 million 60 kg bags of green coffee. Brazil with 61 million bags alone represents 40% of world production. Vietnam, Colombia, Indonesia and Ethiopia follow.
