With this in mind, Markus Hastenflug and Hiroshi Shimodozono founded Shimodozono International GmbH in 1997. Under the KEIKO brand, high-quality Japanese green tea conquered the European market in meticulous pioneering work. The green Japanese half-shade tea "Kabusecha" was the first product to lay the foundation for the implementation of a Japanese tea culture in Germany. Today KEIKO offers a wide range of exceptionally fine top-quality teas from various pickings. Lovingly made on plantations in the Kagoshima region in southern Japan. The range is complemented by freshly ground matcha, semi-shade tea powder and the right accessories, as well as tea sweets and selected other tea specialties.

The cultivation region, the type of cultivation and the processing methods of tea have a great influence on the quality and active ingredients of green tea. In studies, KEIKO teas show top values for valuable antioxidant ingredients and flavors. With the tea infusion you can recognize this by the deep green tea color in the cup, the intense fragrance and the deep, multi-layered aroma.
As is customary in Japan, KEIKO teas are steamed (the steamed Japanese teas are known as Sencha). The majority of these teas are even Fukamushi-chas, i.e. particularly intensely steamed Senchas. Steaming for 1 to 3 minutes opens the leaf pores so that the extract content is increased during the infusion. Fukamushi-chas are usually recognizable by their color, which is intensely green and cloudy, while simple Sencha is often only pale green or even yellowish and clear.

The cultivation on the organic farm takes place under optimal and natural conditions. So the tea plants can be harvested several times a year. The active ingredients contained in the tea differ depending on the picking time. In the first early picking of the year in April, the tea leaves are particularly aromatic due to their slower growth in the even cooler temperatures and, due to the high thine content, have a sweeter, particularly fresh green aroma. The vitamin C content is also highest in the early pickings, while the caffeine content rises until the second picking and only drops sharply for the later pickings. Teas of the first picking are more productive, more tea infusions are possible.

Before you buy a Matcha, you should know that "Matcha" is not a fully protected term. In general, all tea powders can be sold as matcha. KEIKO Matcha is “real” Japanese Matcha according to the traditional definition: A tea powder made from the tea plant growing in full shade and with a grinding of the tea leaf tissue (Tencha) on slow-running special granite stone mills. We label other tea powders such as Kabuse powder and Benifuuki powder accordingly.
