Special silk chillies develop their naturalness with a smell that is reminiscent of paprika paste and give a wonderful taste in dishes, soups or mixed with olive oil that no other chilli pepper can offer. These chillies undergo a traditional drying and grinding process that results in chilli flakes with a very smooth, slippery texture. In the past, the chillies were ground with the help of silk strands, and although more modern grinding machines are used today, the name silk chilli is a reminder of this tradition. ❖ Silk Cut Chili one of the most delicious of the Turkish chilies, the chubby, elongated maras pepper takes its name from the southeastern town of Kahramanmaras, which it grows near the border with Syria. When dried, "Silk Cut Chili" has a color from dark red-orange to an almost carmine-red hue and an earthy, slightly smoky aroma. The taste is rich, fruity and slightly acidic; the heat sets in quickly but never sets your mouth on fire. ❖ There are many complex flavors in Crushed Silk Cut Chili. The chilli has a tomato-like brightness, a touch of raison astringency and a caraway-like earthiness - all in one.
