“THE KING OF THE ESTUARY At LA CURIOSA, we only use mussels of this species (Mytilus galloprovincialis). This is cultivated in rafts, floating platforms from which ropes submerged in the water hang, to which the mussels adhere. Our estuaries are the world's main source of this mollusk, where they have the best food and grow to a larger size. For this specific format, we use large specimens taken from the best-located rafts in our estuaries, cleaned and canned by hand one by one. Once selected, fried in olive oil, and lovingly hand-packed, one by one, they are covered with our marinade made with natural ingredients such as natural paprika, black pepper, cloves, and bay leaves.
