The black elderberry is a very present shrub in Drôme Provençale. It has long been used in herbal medicine to treat fever and respiratory infections. Elderberry also has diuretic and anti-rheumatic properties. In the kitchen, elderberry (flowers or berries) is used in making wine, syrup or jellies. Elderberry vinegar or "surard vinegar" has been produced since antiquity and recognized for its diuretic properties. More digestible than classic wine vinegar, elderberry vinegar is worked only with red wine from the Côtes-du-Rhône with the addition of a decoction of elderberry flowers.
