Wine in Organic Farming Appellation: AOP Luberon Grape varieties: 80% Grenache Noir & 20% Syrah Soil: Clay-sandy soil. Vine about ten years old, cut into a double cordon de Royat and located on the northern slope of the Petit Luberon.   Permanent controlled grassing 1 row out of 2. Area surrounded by hedgerows which are both biological reservoirs, but also natural protection against climatic hazards.     Vinification: Night harvest, direct pressing for Grenache and bleeding for Syrah. Static settling for 48 hours then fermentation at 13°C in thermoregulated stainless steel vats in order to preserve the freshness of the aromas. Passage of 5% of the volume into new barrels to provide complexity and aromatic finesse. At the end of the alcoholic fermentations, clean racking in order to preserve the fine lees and eliminate the coarser ones. Working with fine lees for 5 months. . Tasting: Complex, Thiolé & Floral TAV: 13% vol.alc.
