For this occasion Pierre Yves Javel designed the Saint-Guilhem knife. Its blade has the generous shape of a willow leaf. The handle is thin with a ball-shaped ass. The front part is decorated with a cardabelle, thistle that grows on the Causses. This lucky plant has been nailed to barn doors for generations.
