Nantais Le Monarque Cake, a true 18th century recipe. It is a soft and moist cake made of white almond powder soaked in agricultural rum with lime, cinnamon, cane sugar, bourbon vanilla and various spices. It is covered with a white rum glaze and a layer of apricot jelly. It contains no butter, margarine, lactose, coloring or preservatives. It can be kept for several weeks without having to be refrigerated.
