Cantabrian anchovies Cantabrian anchovies are much more fleshy and tasty, as the icy sea water in which they live causes them to move continuously and never stand still. After a period of maturation with soft pressing in salt, they are worked one by one, exclusively by expert women, who hand down this craft from mother to daughter. Female hands are preferred over male hands, being smaller and more delicate. The quality of these fillets is also determined by the size. The larger the threads, the more accurate the pinning can be. This meticulous procedure makes the processing more elaborate and this differentiates and makes Cantabrian anchovies exclusive compared to ours ‘Luxury’ series (net weight 120g – drained weight 60g 10 fillets) These anchovies are the fruit of the union of two gastronomic excellences from Spain and Italy. The Cantabrian anchovies, from the coastal town of Santoña, are the best in the world. We enhance them with the award-winning 'medium fruity' extra virgin olive oil from Frantoio Galantino. This fruity, intense and exclusively cold-processed oil gives softness and roundness, making the organoleptic characteristics unique, exclusive and with a very low percentage of salt. The 'luxury' quality is the most precious and exclusive. After being caught in the Cantabrian seas and cured in salt for between 12 and 15 months, the anchovies are processed in the Santona factory. They are the largest, 'double zero' in size and are the most renowned precisely because of their size, as the fillet lends itself to careful pinning by expert workers, who pass this ancient craft down from mother to daughter. 10 very large fillets, with firm and tasty meat, suitable for tastings and dishes in which the anchovy is the main protagonist.
