12.5% Vol Alc APPELLATION AOP Burgundy Chardonnay TERROIR Region: Mâconnais Grape variety: Chardonnay – Vines 50 years old on average Vineyard: clay-limestone soils – South-West exposure on the hillsides VINIFICATION AND AGING Traditional vinification: soft pressing, settling, fermentation. Aging on fine lees in thermo-regulated stainless steel vats for about a year. TASTING NOTES Brilliant yellow color with golden reflections. Its nose, intense and delicate, reveals a nice bouquet combining aromas of exotic fruits (mango, pineapple) and dried fruits (hazelnut, almond). Its attack is dense, balanced by a natural minerality. The palate offers notes of citrus fruits and refreshing white fruits. FOOD AND WINE PAIRINGS Serve at 10°C as an aperitif with cheese gougères and grilled prawns. It goes wonderfully with roast veal with green vegetables, or white fish in ravigote sauce.
