The entire supply chain is strictly controlled from the harvesting of the wheat in the fields, to the bronze drawing, to the slow drying, each phase of the process is aimed at obtaining a high-end product.   The Cappelli variety wheat flour, used for the preparation of this pasta, is particularly significant in the Mediterranean diet due to its high protein content (about 16% of the dry product) so much so that, in the early 1900s, it was when Cappelli wheat was introduced into Italy, it was defined as the meat of the poor due to its high protein content and low gluten and sugar content.
