Coriander powder is produced from finely ground coriander seeds. Seeds are harvested when the flowers have faded and the seeds have turned light brown. They are then dried and ground to preserve their aroma and flavor. Coriander powder has a mild, slightly lemony flavor with spicy and warm notes. Coriander powder can be used in a wide variety of dishes including marinades, stews, curries, rice dishes and soups. It can also be used as a garnish for salads, roasted vegetables and grilled meat dishes. To release its aroma, you can toast it lightly in a dry pan before using it.
