                            Coriander seeds are produced from the Coriandrum sativum plant, an annual herb native to Asia and Europe. They are harvested when the flowers have faded and the seeds have turned light brown. Then, they are then dried in the sun or in hot air to preserve their aroma and flavor. Coriander seeds have a mild, slightly lemony flavor with spicy, warm notes. Coriander seeds can be used whole or ground, depending on the recipe. They are often used in marinades, stews, curries and rice dishes. To release their aroma, you can toast them lightly in a dry pan before using them.
