Zaatar or Za’atar, which means “thyme” in Persian, is in a way the herb of Provence of Levantine cuisine.  It is a Middle Eastern seasoning that has been around for several centuries.  While the ingredients vary from region to region, zaatar most often includes thyme, oregano or marjoram, sumac and sesame seeds.  In some kitchens, you can also find mint, savory, or even granulated garlic or coriander seeds.  Zaatar is a fairly versatile blend, with a large number of uses in cooking. Our Zaatar blend is a house interpretation, made like all our blends in our workshop.  It consists of thyme, oregano, roasted sesame and sumac. Zaatar is a perfect seasoning for vegetables in salads, mixed with oil to brush meat before cooking, or simply to flavor hummus just sprinkled on top.  It is a very easy to use mixture, which can be eaten raw or cooked, in the oven or on the barbecue.
