Zaatar or Za'atar, which means "thyme" in Persian, is in a way the Herbe de Provence of Levantine cuisine. It is a seasoning from the Middle East that has been around for several centuries. While the ingredients vary from region to region, zaatar most commonly includes thyme, oregano or marjoram, sumac, and sesame seeds. In some kitchens, you can also find mint, savory, or even garlic powder or coriander seeds. Our Wild Za'atar comes from a small agricultural cooperative in northern Palestine, on the border with Galilee, focused on ecological sustainable development and fair trade principles. It is made with wild oregano, roasted blond sesame seeds, sumac, a hint of olive oil and Dead Sea salt. Zaatar is a perfect seasoning for vegetables in salads, mixed with oil to brush meat before cooking, or simply to flavor hummus just sprinkled on it. It is a very easy to use mixture, which can be eaten both raw and cooked, in the oven or on the barbecue.
