We just love salty liquorice in Sweden. The liquorice comes from Svenska Lakritsfabriken i Ramlösa. We chop the liquorice by hand in our chocolate factory in Umeå, and manually place one piece into each square. We winnow, roast and stone grind the cocoa beans and pour the chocolate over the liquorice in the molds. Liquorice powder and Icelandic sea salt is then sprinkled over the bar by hand before manually wrapped. This chocolate bar is a blend of beans from Jenny’s first collaboration in Ecuador and her latest project with local cocoa farmers in Nicaragua.
