The Gargano stagionato capocollo is similar to what we know under the name "Coppa" and which we find in Corsica and Northern Italy.     Our Gargano capocollo is cut from the pork loin and is carefully flavored with aromatic Gargano herbs during the salting phase, which gives it a sweet scent.     It reveals all its flavors and its generosity cut into thin slices: its flesh is tasty and its fat is very fine, its chew is pleasant in the mouth.     It is eaten in sandwiches, flavored with a little extra virgin olive oil, as an aperitif accompanied by cheese... Many combinations are possible, but it is surely tasted alone that it reveals all its splendor. It’s a real discovery.     Gargano’s Capocollo is gluten-free.
