Einkorn is grown according to rigorous specifications. Naturally rich in lipids, proteins and carbohydrates, spelled is a cereal with a high energy and caloric yield. Very rich in fibre, spelled is a very digestible cereal. This cereal is also distinguished by its very low gluten rate and its balanced mineral composition (magnesium and phosphorus) as well as its high protein content. Einkorn also contains lysine, an essential amino acid. Small spelled flour is used in recipes for breads, pies, pancakes and cookies. Low-gluten pancakes: 150g spelled flour, 75g melted butter, 75ml dark beer, 5 whole eggs, fine salt, 250ml milk. Pour the ingredients into a container and mix everything together. Cook the pancakes in a skillet. For sweet crêpes, replace the salt with 2 spoonfuls of honey or 50g of brown sugar.
