Millet has the particularity that, despite being a cereal, it is naturally gluten-free despite being rich in carbohydrates and proteins. The flour can be used alone for sweets or mixed for pasta and leavened products. Millet flour is rich in starch, calcium, potassium, copper and zinc. Being obtained by grinding the whole seeds and only partially sifted to eliminate their impurities, our millet flour is, therefore, a totally wholemeal product.
