
Oltresole organic millet, in the convenient 1 kg format, is a cereal rich in complex carbohydrates, vegetable proteins and essential minerals such as iron, magnesium, phosphorus and silicon. Yellow in color and small and round in shape, millet belongs to the Graminaceae family and is native to the East: it was one of the basic foods in ancient Egypt, in Roman times and in the Middle Ages. Today, although it has fallen into disuse in the West, millet is experiencing a new popularity thanks to its nutritional properties, which make it an excellent alternative to more common cereals. After a quick rinse under running water, the millet is cooked in boiling water (ratio 1 part millet to 2 parts water) for about 15–20 minutes, until it is tender and the water has been completely absorbed. It lends itself to sweet or savoury preparations: it can be served as a substitute for rice or quinoa in cold salads with vegetables and legumes, used for vegetarian meatballs or added to soups to increase satiety and nutritional value.
