Pearl barley is a cereal originating from the Asian continent. Unlike other types of barley, it is free of bran and husks: the lack of external coating gives it a particular color tending to white. This refining process makes it easier to prepare with less soaking and cooking times. Oltresole pearl barley is rich in properties for the body. Its fibers stimulate the intestine, counteracting constipation and reducing the sense of bloating. It also has an anti-inflammatory power on the bladder and intestines that are often fatigued due to poor eating habits. Organic pearl barley is very rich in vitamins (vitamin E and B vitamins) and minerals (phosphorus potassium zinc magnesium iron silicon and calcium). It lends itself to various recipes including traditional soups and broths but also orzotto, a particular version of risotto to be enriched with seasonal vegetables. It is cooked in water in milk or in broth depending on the type of preparation: after having brought the liquid to a boil, pour the seeds into the pot and let it cook for 20-25 minutes.
