It is among the oldest cereals cultivated and appreciated for its high digestibility and cooking speed, as well as being very versatile in the kitchen. Our spelled is grown exclusively in the municipalities bordering the province of Viterbo. In the Alta Tuscia Viterbese this particular cereal takes the name of 'Spelled of the Pungolo' in honor of the famous event of the Pugnaloni, which has been held for the feast of the Madonna del Fiore for over a century. With the 'pearling' process, the outermost part of the grain is removed and cooking times are reduced, without eliminating any fundamental nutritional principle.
