
Oltresole organic pearl barley, in the convenient 1 kg format, is a 100% Italian cereal, characterised by the removal of bran and husks through pearling, which speeds up cooking and makes it highly digestible. A precious source of soluble and insoluble fiber, B vitamins (B1, B2, B3) and vitamin E, as well as minerals such as iron, magnesium, phosphorus, potassium and calcium, pearl barley supports intestinal regularity, contributes to cardiovascular well-being and helps control abdominal swelling. After a brief rinse under running water, the barley should be cooked in boiling water, vegetable milk or broth (ratio 1:2) for 20–25 minutes, stirring occasionally until completely absorbed; alternatively it can be steamed or baked for different consistencies. Thanks to its neutral and delicate flavour, it is ideal for soups, minestrone, cream soups and “orzotto” – a variant of risotto to be enriched with seasonal vegetables, legumes or mushrooms – but it works equally well in cold summer salads combined with tomatoes, cucumbers, chickpeas and fresh cheeses, or in vegetarian meatballs mixed with spinach, ricotta or pumpkin.
