The best expression of Sangiovese in Poggiopiano, the result of a rigorous choice of plots and harvests and of continuous attention and selection of the wines in the cellar during the long maturation. The entire winemaking process, as well as the selection of the bunches in the vineyard, is carried out with the aim of obtaining all the fruity aromas and only the softest tannins from the grapes. Fermentation takes place in stainless steel vats at a controlled temperature, with pumping over constantly monitored to ensure delicate and effective wetting of the marc cap. The maturing takes place in non-new barrels and at least 12 months in the bottle.
