Selected, caught at their optimum moment, cleaned by hand, grilled just enough to provide the exact point of smoke, and canned with extra virgin olive oil. For the preparation of this preserve, medium/large sized squid have been selected, thus achieving a squid taco with a smooth and juicy texture.
