The melva canutera is one of the most unknown fish and, nevertheless, one of the great gastronomic treasures of Andalusia. Its capture is very limited, from September to the end of November. That makes it a truly special product. That, and its characteristic flavour, aroma and texture that make it unique and different from the rest of the tuna.
