The Andalusian melva canutera is unique and a temporary resource offered by the sea.   On the palate it is a delicacy and a great source of vitamins and proteins.    The melva canutera belongs to the tuna family, like tuna.   Until 1980, only one species was known for this genus, Auxis thazard thazard, but thanks to Rodríguez-Roda its congener Auxis rochei rochei was identified.   It can reach 50 cm and weigh 1.5 kg.   When it does not reach 600 g it is called canutera.   Melva canutera fillets are white in color and have a delicate flavor.   They have the appearance of small eclairs, which are what give them the name Melva Canutera.   Manual peeling guarantees its natural flavor.   The olive oil used as a covering liquid provides oleic acid.   The union of both gives rise to a food that is extraordinarily beneficial for health.
