The melva canutera belongs to the tuna family, like tuna. Until 1980, only one species was known for this genus, Auxis thazard thazard, but thanks to Rodríguez-Roda its congener Auxis rochei rochei was identified. It can reach 50 cm and weigh 1.5 kg. When it does not reach 600 g it is called canutera. Melva canutera fillets are white in color and have a delicate flavor. They have the appearance of small eclairs, which are what give them the name Melva Canutera. Manual peeling guarantees its natural flavor. The olive oil used as a covering liquid provides oleic acid.
