It grows in the Kerman region, it is harvested by the peasant-gatherers of the cooperative which provides us with our caraway, cumin and anise. Dried on stems hanging downwards, they are then beaten to extract all the seeds, followed by a meticulous sorting of the seeds and shards of branches, then it is dried in the sun. Our fennel is exceptional in its aromatic power reminiscent of anise and liquorice.
