Our blue mallow is harvested by the peasant-gatherers of the cooperative with whom we work for our dried flowers in the northeast of the country near the city of Mashad. In April, picking takes place, followed by sorting and drying in the sun. In terms of taste, mallow remains quite flat, it is mainly used for these benefits and its color.
