Pickling is the traditional method of preserving fish in an acidic medium such as wine vinegar. Over time, peppers and garlic were added because peppers have fungicidal properties and garlic has antibiotic properties. Our goal was to infuse potatoes with a flavor common in the Mediterranean, typically accompanying fish, achieved through a blend of vinegar, sweet paprika, garlic and onion. The result is fried potatoes with a delicate and elegant pickled taste, in which the vinegar flavor dominates, but subtle nuances of the other ingredients mentioned can be felt.
