Pesto Rosso (Organic Sauce)

We have kept the majority of the fresh ingredients that make our pesto verde so successful: virgin olive oil, 22-month-aged parmesan, toasted sunflower seeds, fresh garlic. To switch to the red version and obtain a perfect texture without artifice, we replaced the herbs with a mix of dried tomatoes, tomato coulis, ricotta and thyme.
