The Iberico Lomito de Presa de Bellota is one of the jewels of Iberian gastronomy. This piece, which has very little fat and a very characteristic grain, is found at the head of the loin next to the shoulder of the Iberian pig. TASTING NOTE The Bellota Segundín Tenderloin has a firm texture due to its low amount of fat, and a marked aroma. In other words, it melts in the mouth, revealing nuances of paprika and oregano. PAIRING It pairs the Lomito de Bellota Segundín with young wines of the merlot variety or with a fine wine.
